Windows 11 Settings - menu items disappear

Recently upgraded from Win 10 to 11 on a Dell T1600 Xeon PC with nVidia Quadro 2000 graphics.In Settings, some menu items are either not visible, or disappear when the cursor rolls over them.Start menu has no background - turning Transparency mode ON makes the background visible!Various items in apps are invisible until the cursor rolls over - fine if you know where every button etc is, but useless if you don't.Dark modes are better but some things still aren't there (and I don't like dark mode anyway).What can be wrong and is there a setting I have missed?
