Windows 11: How to show open documents individually on taskbar

Hello. After upgrading to windows 11, my productivity is limited by the minimalist approach of the taskbar (and having it locked at the bottom of the screen). Documents are hidden within the icon of the program, and requires actively clicking on the icon to show its content before selecting the file. This small delay adds up to a frustrating amount of time. Previously I had the option of showing open documents individually on the taskbar, how do I configure this in Windows 11? Is there a "professional" version of Windows 11 that isn't configured like an iPad, so I can avoid these issues? This
