Why is microsoft dictating when updates to win 10 pro happen?

I am a supporter of the win updates and like to keep my laptop up to date and as virus free as possible, but I like to do them when it is convenient for me, which is not necessarily when it is convenient for microsoft/windows.

Why can't we be notified that there is an update and let us do it manually when we are not busy doing other things on our pc/laptop, like we were able to on win 7 (sorry, didn't try win 8).

I found it extremely intrusive that while I was doing something else on my laptop, all of a sudden, i get a message saying "it's time to restart to apply updates, either now or later), so I contacted help (back in Sept 2019) and got help to make it manual in win 10 pro. I did my updates having checked approximately weekly on Sundays and kept up to date. This was great until all of a sudden on Dec 12 the updates did themselves automatically again.

So I contacted help again, and was told (most of the conversation following)

Them: "The last update was when the change happened. This was a decision by Microsoft due to security issues with computers not having the updates. I'm sorry if it doesn't please you, but whenever there's an important update it will happen whenever the policy dictates."

Me: "Most of the time my laptop is turned off ... I turn it on when I want to use it ... when I have finished, usually on Sundays, I check for updates ... I don't want it doing it all by itself. Is there a way, like there was in win 7 to manually check for updates, like i have been doing since Sept. "

Them: "There is no way to turn it off...this is because there's so many viruses and other exploits that are taking advantage of security holes being plugged by updates. There's not a way to stop updates entirely."

Me: "I don't mind being notified about updates ... but I want to do them when it suits me ... not microsoft"

Them: "Sorry...this is a Microsoft business decision. Anyone else will tell you the same. It's predicated on security issues. But Microsoft, to ensure a secure computing environment for you and others, has set this in place as a rule going forward."

Me: "If someone doesn't care about keeping their system updated and as virus free as possible ... why not let them suffer for it ... and not punish those of us that do update their systems and keep them as virus free as possible... it is still an intrusion to update when microsoft wants, not when it is convenient for me.
Doing things when microsoft wants leads to them saying ... it's time for you to have a shower, or eat your lunch now, or your fingers are dirty, please don't touch your keyboard until you wash your hands"

Them: "I'm sorry you're upset but this is a support not a commentary website"

(end conversation)

While I understand microsoft wants to keep their operating system bug, flaw and virus free, why do I have to have updates that require restarts to happen when they dictate it, why can't they let me know there is an update and let me do it when it is convenient to me (usually a few hours later, maybe a day, depends on when I find out about it). Are they eventually going to run my life and tell me when to get up, or when to go to bed?? I'm sorry that there are people out there that either can't be bothered or just don't want to update their systems, but why must I be punished/forced to do updates when microsoft wants them done?

I would recommend that they start notifying people there is an update and give them a period of time (maybe a couple of days) to get it done, then (and only then) after that period expires, automatically do it, so that those of us that do keep up to date on our own are not inconvenienced by their just doing it automatically, and probably at a most inconvenient time.
