Why does some, not all, of my email in Windows 11 Mail arrive as HTML code instead of text?

Some of my emails arrive as what looks like to me as HTML code with no text. This is true for all emails I received in reply to another question I submitted to the Community. I know the emails contain text because when I look at the same email on my phone and on my tablet the text is there.
