Why did the recent update to windows 11 remove Rich Text Documents from the right option and how do I get it back?

I updated to Preview for Windows 11 Version 24H2 and after restarting my computer I found all my Rich Text Documents have turned into Word files operating with Office. I HATE Office and it's Word app with a passion and not just because you have to pay for them. I had many years' worth of RTD files and now they are all stuck as useless Word files. How do I get RTD's back? Also, the Photo app changed and now when I open some images the window for them becomes extremely wide while the image is still the usual standard size and I can't make it stop doing that.
