Why can't I change my children's Microsoft Family account details, like email?

The title is the question. This is stupid. Should be able to manage my child's accounts, especially when an email address like: d4fqfxbxrce4qkp6@outlook.com mysteriously becomes associated with it, and not the email that the account was created from.
