Upgraded my pc to the new Intel 13th gen cpu but my ssd has windows 10 activated from windows 7 or 8 upgrade.

So I have a question. If I get a new ssd, install windows 11 on it and use it to replace the old ssd with a previous windows program that upgraded from 7 or 8 to 10, can I still use the old ssd with the new ssd to access data from the old one?
