Stuck on "PC Screen Only"

I have the weirdest bug... I have had 3 monitors connected to my PC for years without any problem. Since yesterday, when I try to use the Project feature (Win + P) the selection is stuck on PC Screen only. When I press Win + P, the selection will go down to Duplicate for an instant and immediately revert back to PC Screen only. If I click with the mouse instead, same thing. If I right click on the desktop and go into Display settings, when I try to scroll down to click on Multiple displays it scrolls back up instantly.
