Stop Windows from updating without my permission

I just lost hours of uninterruptible work due to Windows restarting while I was away. What can I do to prevent Windows from disrupting my work without permission? I have "Restart this device as soon as possible when a restart is required to install an update" turned off, but it restarted without my permission anyway, causing me to lose hours of work.
