removing windows icon on task bar

Hi, i know how to hide taskbar and remove/unpin apps etc, what i want to do is remove the windows start icon/logo from task bar, i hope this is possible. OR is it possible to setup a desktop without the task bar? NOT just hide it.reason> i have setup a small computer for the grandson with his games but he still manages to get into the system controls via the start menu even with hide taskbar
