My computer keeps trying to update me to Windows 11 which the PC doesn't support. How do I stop this?

Hello My computer keeps trying to update me to Windows 11 which my current PC doesn't support. In the past I've had to turn the computer off directly without the normal boot down sequence, and previously when I did update (only to find my PC is not compatible) I had to reset it to a week previous.
