Microsoft Utility Apps disappear/stop working on Host VM (AVD)

I am using Azure Virtual Desktop with several host pools and multiple hosts inside those pools. Randomly, I will see Microsoft utility apps like "Snipping Tool" or "Notepad" stop working and disappear from the apps list. I am able to go out to the Microsoft store to reinstall the apps and get it working again. This will happen to one or two hosts in a pool and seems to happen after the AVD Monitoring Agent is updated (this could be just a coincidence).
