Installing FailOver Custering Feature and Hyper-V Role on Three Servers

Dear Experts,
I am standing new Infrastructure with new hardware. I have three HP Severs (HPE DL360 Generation 10) and HPE MSA2062 .
My Goal is install and configure Hyper-V With Failover Clustering.
Below are the steps to accomplish my tasks which I shortlisted.
1. Windows Installation on HP Server (**Windows Server 2019 Standard)
2. IP Configuration
3. Domain Join (**Already Have Active Directory)
4. Add Hyper-V Roles
5. Add Failover Clustering Feature
6. Add Multipath I/O feature
7. Validate Failover Cluster Configuration and Select Servers
8. Create Cluster & Add Hosts using Browser and assign Name and an IP
9. Add a disk to cluster CSV we will do it two times as I have two Pools of Disk
10.We will also add disk witness around 5 GB.
Now I am little bit confused regarding some steps.
As I see multiple blogs/video its necessary step to connect SAN and its volume through ISCI initiator and Configuration of MPIO.
However in my case I have connectivity of SAN through Fiber channel Wire through Server so how should disk will represent to Server (HOST) I think I don’t need to do ISCI initiator steps so what should I do ?
How I can configure Disk WITNESS on my Cluster as I want to quorum disk through disk witness.
Which type of Quorum should I add?
Use the Default Quorum Configuration
Select the Quorum Witness
Advanced Quorum Configuration
