If I cannot buy Windows 8.1 or 10, what flavor of Linux should I install on a laptop mini server?

I am attempting to upgrade a laptop from Win7 Ultimate to Win 8.1 or Win 10. MSFT does not have either of these available and I have been unable to find media. What flavor of Linux would be suggested for a mini server used as training/demonstration purposes?
