How to use 800x600 resolution on monitors currently on the market?

I have two monitors that are 1280x720. I'm using software that is older and has no newer versions that have pictures on it that appear small. I want to use a lower resolution to make the pictures appear larger, but the lower resolutions have a different ration between length and width. How do I use a lower resolution without stretching the display? Is there a way to show the display on only part of the screen in order to avoid stretching the display, so that some of the length of the screen is not used. That means if I set the monitors to 800x600, 267 pixel length of the monitor would not be u
