How to uninstall OneDrive without losing all my files.

Just wondering if anyone can help me out. Got a new computer a few months ago (windows 11) with OneDrive preinstalled. I never use it and don't want it. The main problem is that it is constantly trying to sync every file on my computer, so it's slowing everything down, and making some features, like jpg thumbnail previews inaccessible. If I uninstall or disable OneDrive it takes all my documents with it. What's going on here and how can I fix it?
