how do i stop microsoft from hijacking my programs

how do i stop microsoft from taking control "hijacking" my computer and adding microsoft apps as defaults? where do i go to retrieve the programs that were removed as my default applications. furthermore how do i stop Edge from constantly taking over my browser? I have changed this daily and getting very upset with microsoft's BS.* Moved from Community Center
