how do I get to the customizable display settings?

the display setting sizes available within the adapter are all too small for this monitor. It was working fine for a long time as I had done that a few months ago; but somehow it has reverted to standard settings. I forgot how I got to the screens that let me actually set the screen boundaries for the monitor. the monitor is a vizio large screen tv using an hdmi cable. also, why did it change by itself? Now some of the icons are outside the boundaries of the screen. this is a pita.
