How do I extract program & app file data from Windows 11 to a new Windows 10 installation with a use of an external drive?

I deleted the previous Windows 10 installation file due to it impacting my main System Drive disk space; I want to try and make a recovery drive by only unselecting the system files, which should technically leave me only with program and app data. Is there any other way than to copy my current Windows 11 app & program files such as "Games", "Browser", "Taskbar Icons placement" and "Desktop Files" on the recovery drive, to then paste it onto my fresh Windows 10 installation?
