How do I change the email that my account is under without losing data?

So I want to change the email associated with my account (as in remove it) because I don't have access to it anymore, and add a new one in its place without losing like pictures, apps, files, information and data, etc. So how could I do that? I see the "delete account" option, but I don't want to lose everything on the computer, I just want to make the account have an email that I can access because I want to shift everything over onto a new computer without losing things, but on a new account.
