How do I change the administrator name on my Surface Go 2 that has Windows 10 in S mode?

When I set up my new tablet, the admin name automatically was set to the first five letters of my email address. So the file folder in C: Users is also set to the first five letters of my email. And it also appears that way in the path names for my one drive documents. I want to change this so it says my full name instead, but all the tutorials I've seen online aren't working. I believe it is because my device is in S mode. For example when I go to Computer Management, there is no option that says "Local Users and Groups" so I cannot change it that way.
