How do I change new laptop to stand alone.

I set up a new computer using my existing Microsoft account and chose set up as new computer. I do not want this computer exchanging information with my other computer and laptop and have purchased a code to download Office 2024 rather than Office365 How do I separate these at this point. Perhaps set up a new Microsoft account with a different email? How would I do that?
