How can I stop Windows Update downloading Windows 11?

I used to be able to tell Windows Update "I don't want windows 11". Now it downloads without asking me and pops up with something saying it has done so and I should restart my PC. But I don't want windows 11 on this device, I prefer windows 10. I have to go and manually delete all the install files, which I don't like doing. How can I tell my PC that I don't want windows 11?
