How can I make computer sleep until I tell it to awaken, and stay awake until I tell it to sleep?

I need to know How can I make computer sleep until I tell it to awaken, and stay awake until I tell it to sleep? Last night for the zillionth time my computer woke me up in the middle of the night playing music and brightening the room. When I turn it off by putting it to sleep, I want it to stay asleep until I wake it, and when I wake it, I want it to stay awake until I put it to sleep or turn it off. I am using Windows 11
