Had to reset Mac Book Pro to original factory setting and did not keep .olm export of outlook - can I recover the data from Time Capsule Backup files?

Hi - I had an unresolvable issue with my Mac Book Pro due to public wifi connection issues (Retina 13-inch, Early 2015 on macOS Catalina 10.15.1) and they had to do a factory reset and re-install at the Genius Bar. As I had everything on time capsule at home, I thought I would be ok, but I am unable to access my offline outlook files - the one I have saved under many files in "on this computer" (I am using outlook 2019 version 16.31).

I have searched the backup files of the time capsule drive but cannot work out where the relevant files are saved. Is there any way to recover these...and import them into the new version of outlook I have re-installed (I have all the online IMAP emails and accounts - but of course not the offline ones).

Of course - I can back up back to the previous back up on my time machine (via my time capsule), but that would reintroduce the issue I was having with my wifi connection and software. Is there anyway to recover the outlook files from the time capsule backup files without going back to the old version, exporting the .olm file and then back again to the new version?

(I have tried looking for the "User\Library\Group Container\UB******9.Office\Outlook\Main Profile" files but they are no where to be seen - are they just related to 2016 version of outlook...? and even then I think the indexing and database of the back up files might be too complicated?)
