Does windows 10 or windows 11 support tablet mode for two interactive displays in extended display configuration?

I have a customer that would like two separate interactive flat panels to be wall mounted and connected to a single host PC in a conference space. The idea is to have an extended display configuration with two touch screen displays, but I don't know if windows tablet mode will support this configuration?
