Documents folder structure mostly remained, All actual files deleted

How do i recover and why does this continue to happen? I dont want one drive. Ever since I uninstalled the horrible program, my files which were saved in Documents" folder have been inaccessible, moved, or missing. I uninstalled one drive five days ago, used my computer today and the documents folder is missing. Where did it go? Found how to add it back. Added it back. But now instead of the 20 something folders and 50 loose files(about 200 items total), five folders and one loose file(about ten total items).
