Changing user email address

[Windows 10]

I set up a new laptop a year ago for my son using my Gmail account associated with Microsoft.I have just bought a new laptop for myself and set it up using the same Gmail address. I now have his favourited websites and school projects on my laptop. Am I able to set up another Microsoft account with a different email address on his laptop? And if I can do this, will all his stuff still be on his laptop?
