Can I use old SSD with different windows without any issues?

I had Windows 10 on my previous laptop, and I have Windows 11 on this one now. I opened a few files after connecting the old SSD to the new laptop externally, but I can not use most of the programs or stuff. Is it possible to use Win 10 SSD (lets call it that) alone without unplugging the main one? All I want is to use the old files to their fullest. I'd also like to delete a few apps. As Windows settings says: I have like 80 GB installed apps but I when I click on it, it opens the Disk C files...
